Why is Gamba fish soup famous?
Gamba fish soup is famous because it tastes like no other. White crabmeat, stem ginger, coriander, and prawn dumplings go into a dish that’s become so beloved that many guests affectionately dub it foup. It’s on all our menus for a very good reason: it’s been there since day dot and Derek might have a few raised eyebrows if it wasn’t.
Says Derek: “Gamba fish soup is hands down the most popular dish on the menu and its popularity just isn’t slowing down any, even after all these years. It’s talked about time after time and I’m happy that it makes my guests happy.
"Guests from all over the world come in and ask about it. We recently welcomed some from America who couldn't wait to try it on the strength of a recommendation from their friends who’d visited earlier in spring. They loved it too.”
How much soup do we go through and what is its secret?
The million-dollar questions are how much soup does Derek make and what’s its secret?
“I make two pots a week on average, which equates to roughly 120 bowls, so about 6000 bowls of soup a year.
“I’m often asked what’s the secret to it tasting so good. The answer is there is no secret. All I would say is that, and like most soups, it always tastes better two to three days after it’s made.”

Wilson’s Catch of the Day in Glasgow is the only other place where you'll find our fish soup. Owner Stuart has been selling it since lockdown, so no need to try and attempt to recreate it, because you can get your fix at home by picking some up from him.
It truly is a one-off.
